In small pan, saute onions until translucent. Put onions in small bowl, mix in 3Eyz Rub, then refrigerate to cool.
In a medium bowl, mix together pork, chilled onion mixture, mayonnaise, bbq sauce, and eggs. Add bread crumbs a little at a time until desired consistency. Mixture should be moist, yet able to be formed. Refrigerate for at least 30 minutes.
Shape mixture into 2 1/2 - 3 oz patties (one batch yields around 10 patties).
Heat 3 Tbsp oil in pan on medium heat.
Fry patties 3 minutes per side (they are done when reach internal temperature of 160 degrees).
Drain on paper towel lined plate.
...or Bake at 350 degrees for 5-7 minutes per side (patties should reach internal temp of 160 degrees)
Serve with your favorite barbecue sauce.
Ground Beef 1000g (2.2 lbs or so)
Qty (2) 28oz cans diced tomatoes
Qty (2) cans tomato paste (Muir Glen, preferred)
Dried Bell Peppers 21g
Cayenne Pepper 2g (1 tsp)
Granulated Garlic 3g (1/2 tsp)
Accent (MSG) 10g
Ancho Chili Powder 20g
Cumin 3g (2 tsp)
4 Dried Thai Chilis
Black Pepper 6g (3 tsp)
Salt 8g (1 tsp)
Qty (2) 4oz cans green chilies
Qty (2) 12oz black beans
Qty (2) Medium yellow onions, chopped
Large knob of butter, 3-5 TBS
Optional: 14g Savory Premium yeast extract, 5g Simple Beef yeast extract for a little extra "je ne sais quois" :-)
Chop the onions and cook them with the ground beef and spices (not the garlic, it will burn) until translucent. This step is important.
Throw everything into a Dutch Oven and cook on low for several hours, or until desired consistency is achieved. Add garlic toward the end of cooking, along with the yeast extract, if used. The yellow onions are key. Do no use "sweet" onions, and let them cook!
Stir in butter just before removing from heat. Add hot sauce if you like it hot.
Perfect over eggs, on nachos or served in a bowl with sour cream, diced onions and shredded cheese.
Beef, ground 1 pound
Onion, chopped ¾ cup
Shortening 1 tbs (may be omitted if beef has sufficient fat)
Flour, all purpose ¼ cup
Tomatoes, canned whole 1 ¼ cup
Mace ½ tsp (nutmeg may be substituted)
Salt ¼ tsp
Pepper, black ¼ tsp
Water ½ cup
MSG ½ tsp
Add tomato paste for richer flavor, adjust Mace to taste. Use only yellow onions and sweat before adding.
Cook at least 10 minutes at a simmer to set flour. Substitute rice flour when freezing.
